Apple Honey Chicken




Chicken

Bone in skin on chicken 
Salt/Pepper to taste

1) Preheat oven to 450 degrees F. 

2) Place chicken on a wire rack on a baking sheet lined with tin foil.

3) Season Chicken with salt and pepper.

4) Bake for 30 minutes, flip chicken and continue baking until crispy. 
(about 30 more minutes) 

Note: because of the high temperature it may start to smoke. The chicken wont burn but any drippings may. I opened my windows and turned on my exhaust fan. 

Sauce

2 cups apple juice
1/2 cup apple cider vinegar
1/4 cup low sodium soy sauce
4 teaspoons honey
grated zest of one lemon
1/8 teaspoon red pepper flakes
1 teaspoon ketchup
1 teaspoon BBQ sauce
3 teaspoons brown sugar

1) put all ingredients into a sauce pan and bring to a boil on medium high heat.  Stirring occasionally.

2) Keep at a high simmer until syrupy and it coats back of spoon. (this takes about 20 minutes)

Note: it took me a while to get the sauce to thicken. You can add more honey or brown sugar if it isn't thickening after 20 minutes. Also if you like it spicier you could add more red pepper flakes to taste. 

Putting it all together

1) Place chicken on your plate and drizzle with sauce. 

2) Enjoy!!
